French Style Scrambled Eggs


Serves 2

– 5 Redmond Farm Eggs – Butter or Ghee
– Real Salt

Crack eggs into a glass mixing bowl and whisk to combine. Set bowl over a saucepan of simmering water and continue whisking until small curds begin to form, 5-7 minutes.
Add a knob of butter or ghee and switch to a rubber spatula. Continue cooking, stirring constantly, until the eggs reach the consistency of custard, about 5 minutes more. Season with salt, remove from heat, and serve immediately.
