Farmhouse Buttermilk Biscuits

Ingredients:

3 cups all-purpose or einkorn flour 2 Tbsp organic cane sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. Real Salt
3/4 cup cold salted cultured butter + 2Tbsp. melted butter to brush on biscuits 1 large Farm Egg, lightly beaten
3/4 cup cold buttermilk

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and set aside. In a mixing bowl, sift together flour, sugar, baking powder, baking soda, and salt. Using your fingers, quickly work the butter into the dry ingredients until the dough is shaggy and there are even bits of cold butter throughout. In a small bowl or liquid measuring cup, combine egg and buttermilk and beat lightly with a fork. Create a well in the center of the flour mixture and add the egg mixture all at once. The dough will be moist.

Turn out the dough onto a floured surface and roll to 1″ thickness. Use a 2 inch round cutter to cut out biscuits and place 1 inch apart on the baking sheet. Brush with melted butter and place in oven on middle rack. Bake 15-18 minutes or until golden brown on top.
