Ingredients:
- 8 Redmond Heritage Farms Real Eggs
- 1 1/4 cups cottage cheese
- 3/4 cup shredded cheddar, pepper jack, or mozzarella cheese
- 3/4 cup cooked Redmond Heritage Farms Country Sausage, excess fat drained
- 3/4 cup chopped green onions
- 2 1/2 tsp. Redmond Real Salt Organic Season Salt
- 1/4 tsp. cracked black pepper
Instructions:
- Preheat the oven to 325°F. Place a baking dish filled with water on the bottom rack to create steam, which will create a more custardy egg bite.
- Lightly grease muffin tins with butter.
- In a blender, combine eggs, cottage cheese, season salt, and pepper, and blend until smooth.
- Add about 2 Tbsp. of cooked sausage, shredded cheese, and green onions to each muffin cup.
- Fill each muffin cup to the top with the egg mixture.
- Bake for 20–25 minutes, until eggs are set and lightly golden.
- Yields 12 bites.
